The little history of the bagel

The origin of the bagel goes back to a baker who wanted to thank a Polish king for having protected the Jews against the invasion of the Turks. He would then have created a loaf in the shape of a stirrup (bugel meant stirrup) to recall the king's favorite pastime: horse riding.

These small breads, about ten centimeters in diameter, originating from central or eastern Europe , followed Jewish immigrants from Eastern Europe to the United States ( New York ) and Canada ( Montreal ) where they are served garnished with fromage blanc , smoked salmon or other ingredients depending on their availability and the imagination of the cook. They are sometimes found plain but often flavored with sesame , caraway , poppy seeds , cinnamon , fried onions or even grapes .
